Red
and rosé wines. Originally of V.D.Q.S. rank (French appelation
wine ranked under the A.O.C.), but will pass onto the A.O.C. ranking
at the end of 1997.
Controlled
Cultivation Zone : a sort of an amphitheater leaning against the
Montagne Noire irrigated by six rivers. Oriented to the South,
it dominates the town of Carcassonne. Geology : calcareous mixed
with marl. In climbing the slopes, one finds granite followed
by schist and gneiss. Climate : at the crossroads of two climates
: the mildness of the atlantic and the heat of the Mediterranean.
Grape-variety : a mixture of atlantic grape-varieties (60% max.)
such as Cabernet Sauvignon, Merlot, Cot, Fer Servadou and Mediterranean
varieties such as Grenache, Syrah, Cinsault and Carignan. Vinification
: red : classical; prolonged with the atlantic grape-varieties,
carbonic maceration with certain Mediterranean varieties.
Caracteristics
: Some of these wines reminds one of the South-West due to their
aromas and fruity tastes. Others are more marked by the Grenache
or the Syrah.
