The grape-variety is a type of vine plant.
Each grape-variety has its own characteristic adapted to a type of soil and climate. Three categories of grape-varieties exist according to the color of the grapes : white, red and gray or rosé. Certain grape-varieties exist in the three colors.
One finds in each wine-growing region the grape-varieties to which it is most adapted, but demand and economic factors also play a role in the choice of grape-varieties.
The AOC wines can be made of only one or several grape-varieties (La Clairette of the Languedoc region, for example contains only Clairette, the La Blanquette is 100 percent Mauzac).
One finds in the wines of Languedoc, the use of mediterranean grape-varieties such as Grenache, Mourvèdre, Syrah or Cinsault going along with grape-varieties from other wine growing regions (Cabernet Sauvignon, Chardonnay, Pinot etc...).

In Languedoc-Roussillon, separate vinification of grape-varieties according to their maturity and behavior in tanks is the general rule. Next, very special attention is given to the blending process
