Controlled
Cultivation Zone : terraces dominating the Hérault river
some 30 km from the seaside, spread among 8 communes. It is the
smallest and oldest cultivation site in the Languedoc region.
Geology : several terroirs made up for the greatest part of quartz,
silex and chalk bound by a sandy-clayey matrix. This soil is typical
of the quaternary era. Emergence of schist in the North. Climate
: Mediterranean diminished by the presence of the Cévenne
mountains. Grape-Variety : 100% Clairette. Vinification : manual
harvest, complete de-stemming, light maceration with straining,
fermentation at controlled temperature.
Caracteristics
: a subtle and refined accompaniment for fine fish and shellfish.
