with a development of mediterranean grape-varieties such as Grenache,
Mourvedre or Syrah.
The separate vinification of the grape-varieties based on their
maturity and their "reaction" in the tank is the main rule.

this step, wine growers give great attention to the blending.
Today, the tendancy is biological fertilizing of the soil rather
than chemical fertilizing.
Increase in the utilization of compost. Control of the yield in
order to maintain quality for AOC wines (50 hl/ha for red wines
and 60 hl/ha for white wines).
