Red
and rosé wines. AOC classification in 1982.
Controlled Cultivation Zone : North of Béziers and Pézenas;
a terroir that leaves the plains to climb the first foot hills
of the Cévennes at 300 m of altitude.
Geology : mainly schistous. The schist store the heat of the day
and release it during the cool hours of the night. A phenomenon
that is favorable to the maturation.
Climate : mediterranean, mild and dry.
Grape-varieties : Carignan, Cinsault, Syrah, Grenache and Mourvèdre.
Vinification : carbonic maceration for the red Carignan, traditional
for the rest. Vatting time of 5-6 days up to 20-25 days for the
vintage reserved for ageing. Maturing in oak barrels. For the
rosé wines, bleeding and direct pressing is used but skin
maceration is practised more and more.
Caracteristics : they are fleshy in taste and silky in tannins
with mild aromas of matured fruits and of liquorice. They emit
suave bouquets with touches of leather and flint. Meat and poultry
have good company with the Faugères wines. The supreme
taste of these wines will be mostly appreciated with a piece of
beef or with game.
