Red
and rosé wines. The production zone of Malepère is
in the process to receive an AOC classification
Controlled
Cultivation Zone : edged on the North by the Canal du Midi, eastwardly
by the Aude, the westernmost of the appelation of the Languedoc
region stretches into the Carcassonne triangle, Limoux and Castelnaudary.
Geology
: a sequence of hills and valleys on the clayey-calcareous soils
around the Naut mountain culminating at 442 m. Slopes and gravel
terraces are edging this sandstone range of mountains.
Climate
: mediterranean with oceanic effects, stronger on the West of the
range. The North and South sides are marked by both influences.
Grape-varieties :
The principal grape-varieties for the red wines are : Merlot, Cot
and Cinsault. Secondary grape-varieties are the Cabernet-Sauvignon,
Cabernet Franc, Grenache, Lladoner et Syrah.
For the rosés : Cinsault, Grenache, Lladoner.
Vinification :
For the red wines : traditional fermentation, maceration depends
on the type of grape-variety; ageing in casks or tanks. The rosés
are obtained through bleeding, fermentation at low temperature.
Caracteristics
: the union of different grape-varieties contribute to the originality
of the Malepère wines which accompany very well red meats,
game or fermented cheeses.
