Red, white and rosés wines. Muscat and "noble" wines. AOC classification in 1985.

Controlled Cultivation Zone : a vast amphitheater defined by the Canal du Midi in the South, the Montagne Noire in the North on an area which stretches from upper Narbonne to the gate of Carcassonne.

Geology : the Clamoux, Argent Double, Ognon and the Cesse descending from the Montagne Noire towards the Aude have created a series of terraces made of gravel, shingle, schist or limestone. In the North-West are found veins of schist and white marble. The higher zone have limestone plateaus pierced by breathtaking gorges.

Climate : mediterranean with oceanic influences in the West part (Clamoux and Côtes Noires) and some rigorous winter for the Causse situated at 200 m of altitude.

Grape-varieties : Syrah, Mourvèdre, Grenache, Carignan, Cinsault for the red. Marsanne, Roussanne, Maccabeu, Bourboulenc, Clairette, Grenache, Vermentino and muscat with small grains for the whites.

Vinification :
Red : there are 2 methods - one traditional after destemming and one with whole grain.
Rosé : bleeding with predominance of Syrah.
White : with direct pressing. A part is stored in cask.
Muscat de St Jean de Minervois : natural sweet wine.

Caracteristics :
The Eastern part of Minervois offers structured red wines of a nice black currant color, the center, distinguished and supple, while the whites are fresh and rich in floral aromas. In the West, the reds are vivid and aromatic, the whites dryer. In altitude, the reds are more robust while the whites are inspired by the heather's perfumes. At Saint Jean de Minervois the Muscat is opening out, natural sweet wine, delicate and fruity.
