Five
kilometers from Meze, the main city of the Bassin de Thau, Bouzigues
is the chief shellfish production town. This has been so since 1925
when one resident decided to raise oysters by attaching them to
mangrovewoods. Today, these wooden bars have been replaced by nylon
cords. Along the lagoon are about 4000 residents involved in modernized
oyster farming. The Bouzigues museum describes the evolution of
the oyster farming. It is more precise to refer to shellfish -farming
since beside her reputed oysters, the Bassin de Thau supplies almost
30% of the national production of mussels. Her production of molls
and clams cannot be neglected either.
